Surface modeling involves a top-down thinking process to consider how an object can be decomposed into a number of surfaces and how these surfaces are constructed individually. After completing this analysis, you proceed to the bottom-up process of making the individual surfaces and eventually composing a model from the set of surfaces produced. To be able to start the top-down thinking process and subsequently perform the bottom-up process of building the surface model, you need to know what Rhino surfaces are available and how they can be built.
